The Recipe: Chicken Fiesta Soup
Ingredients
3 chicken breasts
Water (enough to cover chicken by 1 inch)
¼ cup butter
1 large onion, diced
6 cloves garlic, minced
1 can chopped green chiles
3 potatoes, cubed
8 oz Monterey Jack cheese, grated
2 tomatoes, chopped
1 (14.5 oz) can diced tomatoes
8 oz chicken broth
¼ cup fresh cilantro, chopped
1 lime, cut into wedges
Salt and pepper, to taste
Tortilla chips
Plain Greek yogurt (optional)
Avocado (optional)
Instructions
1. Cook Chicken
Place the chicken breasts in a pot and cover with water by about one inch (or more if you prefer extra broth). Bring to a gentle boil, then reduce heat and simmer until chicken is cooked through (about 12–15 minutes). Strain but don’t discard the cooking liquid—it becomes your homemade stock.
Shred or cube the cooked chicken and set aside.
2. Build the Flavor Base
In a large sauce pan, melt the butter over medium heat. Add the diced onion, minced garlic, and the can of green chiles. Sauté until the onions turn translucent and fragrant, about 5–7 minutes.
3. Boil Potatoes in Stock
In a soup pot, pour in the reserved chicken stock and the 8 oz of chicken broth. Add the cubed potatoes. Bring to a boil, then reduce to a simmer. Cook for 15 minutes, or until potatoes are tender.
4. Add Tomatoes, Chicken, and Sautéd Veggies
Add the canned tomatoes, chicken, and sautéd veggies. Simmer for an additional 5 minutes to marry the flavors. Season well with salt and pepper.
5. Assemble + Serve
